Pizza Grilled Cheese


The Real Deal Pizza "Grilled" Cheese...


Football season means tailgate parties. Whether you are at the game or at home, you can turn the ordinary snacks into extraordinary ones. This pizza grilled cheese is amazing and features a pepper shake I frequently use while cooking, so you might want to order some and keep it on hand for future recipes. Also, this can be made with smaller slices of bread for snacking or you can use bigger bread for a meal sized sandwich. I will show you both.



What you'll need:

  • A good sourdough bread, sliced on setting 8 (I use bread from Alaskan Sourdough Bakery)
  • Olive oil
  • Mozzarella cheese ( please, NO pre-shredded cheese)
  • Marinara sauce of your choice ( I make my own, but your favorite one will work nicely)
  • Sliced pepperoni 
  • Doc Meyers Hot Pepper Shake ( this is a must have)


Directions:

My gas grill is a three burner, so I turn two burners on and leave the third off. However, you can easily do this with a charcoal grill as well by pushing the coals to one side of the grill.


Using a basting brush, coat each side of all slices 
of bread. Place on grill on indirect heat.

Make foil "boats" and place a healthy ( I use a lot) amount of shredded mozzarella on them. Shake as much pepper shake as you wish on the cheese. If you like it hot, add more. Put those foil boats on the grill to let the pepper shake melt into the cheese until it bubbles.
When the bread slices have turned golden brown, flip them over. Brush on your marinara and add sliced pepperoni. Pour cheese over the pepperoni on each sandwich. Add a little more shredded mozzarella and place the top piece of bread on the sandwich. Leave them on the grill until cheese is thoroughly melted. Serve with marina for dipping.



  

Hints: It is best to cut these sandwiches into strips for easier dipping.

Tweaks: You can add fresh basil leaves to the sandwich. Also, you can use any of your favorite pizza toppings such as browned Italian sausage crumbles or olives.

Musts: I have tried ALL of the red pepper flake shakers and none have the flavor that Doc Meyers Pepper Shake has. I do not recommend substituting.

There it is, my first recipe. I picked this one as it is football season and it is simple but not the same old pizza, wings, or chips. I like to elevate my game and I hope you do too! Thanks guys and happy grilling!
